I'm not an expert (or Greek) but I have eaten a ton of moussaka, and the only recipe I've found so far that comes close to good moussaka is this one: http://greekfood.about.com/od/maindishes/ss/moussaka.htm

I haven't used Boca "ground beef" for this particular recipe, but I think it would probably substitute really well to make this dish vegetarian.
